Ingredients for octopus with herbs

  • Octopus fillet 180g, mash, Fava beans 70g.
  • Eggplant mash 50g - Onion 20g, Olive oil 40g, .
  • Caramelized onions 50g, Balsamic cream 30g, Salt 3g, Pepper 1g.
  • Wine 50g, Vinegar 40g, Oregano 1g.
  • Water, tomato fresh 40g, anise 1g .

Implementation :

  • We take the octopus and carve it behind the blocks, put it on an aluminum foil, where we add olive oil, vinegar, salt, pepper and oregano, then close it tightly and put it in the oven for 45 minutes at 180, we will also cook the whole eggplant in the oven. then we will take a fresh onion and fry it in a pot with olive oil and fava beans, we will add the water, salt, pepper and bay leaves, mix a little and let it simmer, as soon as the liquid is gone, we will take out the bay and blend it together with a little olive oil and we will leave it.

    Then take the octopus out of the oven, chop it into large cubes and put it in a bowl and mix it with fresh onion, tomato, olive oil, salt, oregano and vinegar and serve it on a plate with a garnish the fava beans and the eggplant where we will take the crumb and blend it with a little butter, salt and pepper
